Beer Batter Fish Fry

Cooking fresh-caught fish over your Freedom Campfire is a true camper's reward. It’s easy and delicious. Grab your rod and reel, and good luck!
  1. After catching trout or another species in the stream or lake you are camping near, clean each fish and then filet them if desired.
  2. Prepare a low fire for cooking. You will need a skillet for use over the grill rack.
  3. While waiting for the fire to burn down, mix together your fish batter:
    1 cup of dry buttermilk pancake mix
    3⁄4 cup beer
    1⁄4 cup oil
    (Or just refer to our Freedom Flapjacks recipe and substitute your favorite beer for the buttermilk!)
    Once the fire has burned down to almost no flame, spread out and level the coals. Then place the grill rack on the container and set your skillet on top of it.
  4. When the skillet is hot, dry the filets and dip them into the batter. Add a splash of oil to the pan, and fry each filet until it's golden brown in color and is as crisp as you'd like it to be.
  5. Now take your fish from the pan and squeeze a little lemon on it -- fresh caught and cooked perfectly!
